ABOUT US

Our foodtruck is a family owned and operated foodtruck. Chef Nicholas has been featured in many local articles and news stories.

Born and raised in New Orleans, Nicholas relocated to Las Vegas and now shares home-style recipes from mom, grandma, auntie, and the best-known cajun chefs in town!

We offer daily specials as well as a regular menu. You’ll love our authentic poboys, jambalaya, red beans (Mondays, of course!), and even beignets.

Best Seller!

Try our pastalaya special. Only available on certain days, this one sells out fast! It's a mix of classic jambalaya made with pasta instead of rice. We use veggie pasta in this one to keep it gluten free!

Chef Recommended

Chef Nic's favorite: shrimp etouffee. We create the roux with remaining shrimp shells and other secret ingredients over a 2 hour boil. Just for the roux! Then we begin creating the dish itself.

Desserts

Beignets are available while they last, but we try and make enough for extras for ourselves every day 🙂 We also regularly offer pies, and other baked goods. Sometimes even King Cake!
